Sundays often lend themselves to more elaborate or heavy prepping of meals. It’s the one day of the week that I’ve got no commitments.
I generally use Sundays to prepare for the week ahead, go grocery shopping and plan meals. I really like have elements prepped that can be used in a variety of dishes. Tonight’s dinner was salad rolls and grilled chicken breasts. The salad rolls were definitely the stars of the show!
I prepared a variety of vegetables and fruits:
Carrots, bean sprouts, red onion, English cucumber, grape tomatoes, avocados, mangoes, romaine lettuce, blanched green beans, plus fresh cilantro and basil.
I cooked some rice noodles. I used A Taste of Thai brand.
Made some spicy peanut sauce.
Soaked some Blue Lotus brand rice pancake (papers).
So easy, beautiful, nutritious, and gluten free.
